Pierce the sweet potatoes and roast them at 375°F for about an hour and a half until very tender and cooked through.

Once cooled enough to handle, peel the roasted sweet potatoes and transfer them to a bowl.

Mash the sweet potatoes with a fork or potato masher until smooth.

Add granulated sugar and brown sugar to the mashed sweet potatoes.

Add a pinch of salt for balance to cut through the sweetness.

Add milk, two eggs, and melted butter to the mixture.
