The Easiest Strawberry Tart in the World (No Oven)

A no-bake strawberry tart prepared in minutes with a crispy biscuit base, creamy filling, and fresh strawberries. Light, fresh, and perfect for the whole family.

Blend the shortbread biscuits in a food processor until fine, add melted butter and mix until the mixture resembles wet breadcrumbs.

Pour the biscuit mixture into a parchment-lined tart pan, press firmly with the back of a spoon across the bottom, then work up the sides to about half a centimetre thickness.

Spread a thin layer of strawberry jam evenly across the biscuit base and place the tart in the freezer for 10 minutes.

Pour heavy cream into a large bowl, add a few fresh strawberries, sugar, and vanilla, then blend on low speed until fully combined.

Continue beating the cream mixture until light and fluffy whipped cream forms.

Remove the tart from the freezer and arrange fresh strawberry slices on top of the jam.

Use an offset spatula to spread the whipped cream over the strawberries and jam, working it to the edges against the biscuit base and creating natural wavy patterns.

Place the tart back in the refrigerator to chill. Just before serving, decorate with fresh strawberries, mint or basil leaves, and lemon zest.
