When mixing your pancake batter, replace the oil or butter with mayonnaise. Since mayo is essentially an emulsion of oil and eggs, it makes the pancakes softer, richer, and more tender — you won't taste the mayo at all.

After mixing the batter, let it rest for about 10 minutes before cooking. This allows the flour to fully hydrate and relax, resulting in fluffier pancakes with better structure.

For perfectly shaped pancakes, place a lightly greased ring mold in the pan, pour the batter inside, cover with a lid, and cook until set. Then remove the ring and flip for a perfectly round pancake every time.

To have pancakes ready anytime, make extra and store them in a Ziploc bag in the freezer. When you want one, reheat it straight from frozen in a toaster.
