A Japanese-Western style pork steak using pork belly instead of traditional beef. The pork is seared and simmered in a sweet-savory sauce that coats the meat with rich flavor, served with daikon radish. Accompanied by a light broth made with clams and vegetables.

Steps

Season the two pieces of pork belly with salt and black pepper.

Sear the pork in a skillet with oil until the surface is golden and caramelized.

Combine sake, mirin, brown sugar, soy sauce, black peppercorns, garlic paste, and butter to make the sauce.

Pour the sauce into the skillet with the pork and simmer until the sauce thickens and coats the meat with rich flavor.

Cut the daikon radish into chunks and simmer in chicken stock in a separate pot until tender.

Add the clams, cherry tomatoes, cabbage, onion, and okra to the broth and simmer until cooked through.

Plate the pork steak with the daikon radish and serve alongside the vegetable and clam broth.
