Ingredients

pasta8 oz
garlicfresh garlic, or shallots as alternative~2-3 clovesest.
olive oil~2 tbspest.
hot pepper flakesa pinch
cherry tomatoesfresh or frozen~1 cupest.
salta pinch
Boursin cheese5 oz
spinacha handful
Parmesan cheesefreshly grated, a big handful~½ cupest.
fresh parsley~2 tbspest.

Heat garlic and olive oil (or shallots and olive oil) in a pan with a pinch of hot pepper flakes until fragrant.

Add cherry tomatoes and a pinch of salt; cook until the tomato liquid releases and reduces.

Cook the pasta in boiling salted water for about 7 minutes until al dente.

Drain the pasta and set aside, reserving some of the starchy cooking water.

Add the whole block of Boursin cheese to the tomatoes and return to heat, cooking until the cheese is completely melted, about 2 minutes.

Add a handful of spinach and gently stir over low heat until wilted.

Toss in the drained pasta, about 1/3 cup of pasta cooking water, a big handful of Parmesan cheese, and fresh parsley; mix well.
