Toast the sesame seeds and hazelnuts in a dry pan until fragrant.

Select the freshest sashimi-grade yellowfin tuna and carefully trim the bloodline. Cut along the sinew line and separate the loin from the skin cleanly.

Scrape and reserve any flesh remaining on the skin for tartare. Dice the tuna loin into cubes.

Mix tamari (or soy sauce), oil, and vinegar in a 2:2:1 ratio. Add red pepper flakes.

Add the diced tuna to the dressing along with chopped green onions and yellow onion. Season with salt as needed.
