A classic American apple pie with a homemade crust, a generous filling of cinnamon-spiced apples, and a golden, crispy crumble topping. The result is a perfect balance of textures: crispy on the outside, tender and caramelised apples within.

Make the crust: Combine flour, sea salt, and cold butter in a bowl. Using a food processor with a paddle attachment (or by hand), rub the butter into the flour until the mixture resembles coarse breadcrumbs with small butter flakes throughout.

Gradually add 60–80 ml of cold water, a little at a time, stirring gently until the dough just comes together. Stop as soon as it forms a cohesive mass—do not overmix to preserve the layered butter texture.

Shape the dough into a disc, wrap in plastic film, and refrigerate while preparing the remaining ingredients.

Make the crumble: In a bowl, combine flour, sugar, and cold butter. Gently rub together with your fingers until the mixture resembles loose, coarse crumbs. Refrigerate until needed.

Prepare the apples: Peel, core, and cut the apples into thick slices or chunks. Mix the cinnamon and sugar together in a small bowl to ensure the cinnamon is evenly distributed.

Place the apple chunks in a large bowl and sprinkle the cinnamon-sugar mixture over them. Toss the apples several times, folding them gently, until every piece is evenly coated with the cinnamon sugar.

Lightly flour the work surface and remove the chilled dough. Roll out the dough, rotating it frequently to maintain a round shape, until about 3–4 mm thick.

Brush away excess flour and gently transfer the dough into the tart pan. Press it gently into the bottom and sides. Trim any overhang with a knife, creating clean, even edges.

Prick the base of the crust with a fork in several places to prevent the pastry from puffing up during baking.

Arrange the spiced apples in the pastry shell, layering them neatly. Scatter the chilled crumble mixture evenly over the top.

Place the pie in a preheated 180°C (356°F) oven and bake for approximately 50 minutes until the crust is golden brown, the crumble is lightly caramelised, and the apples are very tender.

Remove from the oven and allow to cool completely at room temperature. The pie will set further as it cools. It tastes even better the next day after the flavours have developed.
