Asparagus and Chicken Stir Fry

   Mince 5 cloves of garlic and cut half an onion into large strips. Cut the asparagus into 3-inch sections, slicing diagonally.

   Slice the chicken and marinate with soy sauce, oyster sauce, dark soy sauce, white pepper powder, sugar, baking soda, cornstarch, and water. Mix until even, then add 1 tbsp oil.

   Heat oil in a wok over medium-high heat. Stir-fry the onion for about 1 minute, season with salt, and cook until softened.

   Remove the onion and set aside. Add more oil to the pan, then salt and sugar. Immediately add asparagus and stir-fry for 2–3 minutes until coated with oil. Add rice wine and continue cooking until tender.

   Remove asparagus and set aside. Add more oil to the pan, then add the marinated chicken. Spread it out and let it cook until the bottom is golden.

   Add minced garlic and stir-fry with the chicken until about 80% cooked. Add 1 tsp rice wine (optional) and toss to combine.

   Season the chicken with soy sauce and dark soy sauce. Keep stir-frying until the color is even, then add water or chicken broth. The liquid will boil and thicken into a sauce.
