Garlic Chicken Wings

   Rinse the chicken wings multiple times and pat dry. Mix the wings with salt, white pepper powder, dark soy sauce, and rice wine. Combine thoroughly and marinate for at least 20 minutes.

   Chop one green onion into small pieces and peel the garlic cloves.

   Heat oil in a pan over medium heat. Add the garlic and stir constantly until the outer surface is mostly golden brown, then remove from the pan.

   In the same pan with the remaining oil, spread out the chicken wings and pan-fry until the bottom is golden brown. Flip and pan-fry the other side until also golden brown.

   Add Japanese sake, oyster sauce, soy sauce, sugar, salt, dark soy sauce, and the pan-fried garlic to the wings. Stir gently to combine everything evenly.

   Cover the pan and reduce heat to medium-low. Cook for 5 minutes. Flip the wings and cook the other side for another 5 minutes so both sides absorb the sauce and color evenly.
