Mince 5 cloves of garlic. Prepare 4 green onions by chopping the white stems into small pieces and cutting the green leafy parts into 2-inch sections; keep them separate.

Cut half an onion into thin strips, carefully separating the layers. Cut the cabbage into thin strips as well.

Slice the beef against the grain of the muscle fibers to ensure tenderness after cooking.

Marinate the beef with soy sauce, dark soy sauce, water, sugar, baking soda, and cornstarch; mix well and add sesame oil.

Boil a pot of water and cook the dried noodles until slightly softened. Gently break apart and loosen the noodles, then drain.

Heat oil in a hot wok or large pan over medium-high heat. Add the chopped green onion stems and brief stir briefly to release their flavor.

Add the marinated beef and stir-fry with the green onion stems until about 50% cooked.

Add the minced garlic and a small amount of dark soy sauce; continue stir-frying until the beef is evenly colored.

Add a little water; let it boil quickly and thicken into a sauce that coats the beef, then remove the beef from the pan.

Add more oil to the pan. Add a pinch of salt and sugar, then immediately add the cabbage and onion strips; stir-fry for about 40 seconds.

Add rice wine to elevate the flavor; quickly toss a few times to allow the alcohol to evaporate, then remove from the pan.

Add more oil to the pan and add the drained noodles. Toss until all the noodles are coated with oil.

Season with soy sauce, dark soy sauce, and a little sugar; continue tossing and stir-frying until the color is even.

Add back the sautéed cabbage, onion, and beef along with the green onion leaves and sesame oil. Toss everything together until evenly mixed and serve.
