Prepare the ingredients. Separate green onion whites from greens, smash the whites for cooking and chop the greens for garnish. Slice ginger and break apart dried chili peppers to avoid biting directly on seeds.

Clean and pat dry the chicken wings with paper towels.

Heat oil in a pan over high heat. Add chicken wings and sear for about 3 minutes until one side is golden brown.

Flip the wings and cook for another 3 minutes.

Add salt, dark soy sauce, white parts of green onion, and dried chili peppers.

Pour in about two-thirds of a can of beer.

Cover the pan and reduce heat to medium. Braise for about 15 minutes.

Check after about 12 minutes and flip the wings to ensure even cooking.

Increase heat to high and let the liquid evaporate until only fat remains and wings are glossy.

Plate the wings and garnish with the reserved green onion greens.
