Mild shishito peppers roasted until blistered and caramelized, then tossed with garlic, green onions, soy sauce and black vinegar—a simple, vibrant side dish.

Prepare the peppers. Optionally remove the seeds: cut off the stem end and use a small spoon to scoop out the seeds. Alternatively, leave them whole or with seeds intact.

Heat a wok to medium heat. Add the peppers and roast for 7–8 minutes, stirring occasionally, until the skins are blistered and charred with tiger-stripe patterns.

When the peppers are nearly done, push them to the side of the wok, add oil, then add the garlic and stir until fragrant.

Add the light soy sauce and green onions, tossing everything together.

Finish with black vinegar. If using a wok or carbon steel pan, add the vinegar at the end to avoid acidity damaging the seasoning. Toss well and serve.
