   Chop the whole chicken into pieces and clean thoroughly with lemon juice, vinegar, and cool water.

   Season the chicken with oil, all purpose seasoning, salt, curry powder, and a generous amount of freshly blended green seasoning. Mix well and let marinate for about 30 minutes.

   Add oil and brown sugar to a pot and caramelize over heat. This should take about 5 minutes until the sugar reaches the desired golden brown color.

   Add the marinated chicken to the caramelized sugar and cover without stirring. Let cook for about 5 minutes to develop a beautiful golden-brown color on the chicken.

   Keep the pot covered and cook for another 5 minutes until most of the liquid at the bottom has evaporated.

   Add a generous amount of ketchup, then pour in the water mixed with the seasonings from the bowl. Add a whole Scotch bonnet pepper and thyme. Simmer over low heat for about 30 minutes.

   If desired, add carrots to the stew. Continue cooking for another 5 minutes to allow the gravy to thicken.
