Cut the beef steak into small pieces and combine in a bowl with lime juice, orange juice, oil, minced garlic, onion powder, garlic powder, black pepper, Chef Mérito seasoning, and salt. Mix until everything is well coated.

Allow the meat to marinate for a few minutes to absorb the flavors.

Melt butter in a saucepan over medium heat. Stir in the green chili for a few seconds, then add the all-purpose flour and whisk together.

Slowly pour in the milk while whisking continuously. Then slowly add the evaporated milk, whisking as you pour.

Season with onion powder, garlic powder, and salt. Continue whisking until the sauce thickens, which should take a few minutes.

Taste the sauce and adjust seasoning as needed. Reduce heat to the lowest setting and add one cup each of pepper jack, Oaxaca, and white cheddar cheese, allowing each to fully melt before adding the next.

Keep the cheese sauce on the lowest heat setting while preparing the other components.

Heat a skillet or comal over high heat until very hot. Arrange the marinated meat in a single layer and cook for about 3 minutes until done. Remove from heat and wrap in foil to keep warm.

Deep fry the frozen fries until golden and crispy. Drain excess oil.

Arrange the fries on a serving plate and drizzle generously with the white cheese sauce. Top with the carne asada, sprinkle with additional cheese, add Mexican crema, guacamole, and pico de gallo.
