Remove the top and bottom ends of the cassava. Peel carefully using a vegetable peeler, then cut into fry-sized sticks. Transfer to a mixing bowl, cover with water, and soak for about 5 minutes.

Drain the soaking water and transfer the cassava to a pot. Add fresh water to cover, bring to a boil, and preheat the oven to 400°F. Boil the cassava until fork-tender, then drain completely.

Add avocado oil, onion powder, garlic powder, smoked paprika, cayenne pepper, and salt. Toss thoroughly to coat evenly. Spread onto a baking tray and bake at 400°F for 30–35 minutes.

While the fries bake, combine the plant-based mayo with chili oil and stir until well blended.
