Slice and dice the steak into small pieces.

Pour oil into a heavy pot and heat until hot.

Add the diced steak to the hot oil, season with salt, and cook until browned.

Prepare the salsa: place tomatoes, serrano peppers, red perón pepper, onion, and garlic in a pot and cook until softened.

Slice the jalapeños into strips and remove the seeds.

Slice the onion thinly.

Grind the cooked salsa ingredients: blend the onion and garlic with salt, then add the softened tomatoes and peppers, mixing until the sauce is smooth.

Add the sliced onions and jalapeños to the cooked steak, stir well and cook until all ingredients are combined and slightly caramelized.

In another skillet, heat a little oil and place a flour tortilla in it.

Place cheese on the tortilla and let it melt.

Spoon the steak mixture onto the melted cheese.

Fold the tortilla over and pan-fry until both sides are golden and crispy.

Repeat steps 9 through 12 for the remaining quesadillas.

Plate the finished quesadillas and serve with the salsa on the side, drizzling according to taste.
