Slice the onions into thin strands and sauté in heated olive oil. Cover the pan to speed up caramelization, stirring regularly. If sticking, add a splash of water. Continue until the onions are deeply caramelized and golden brown.

Transfer the caramelized onions to a plate. Shape the ground beef into two patties and place them on a hot skillet, pressing firmly with a spatula to flatten.

Season the patties with salt and black pepper. Cook for 2–3 minutes, then flip.

After flipping the first patty, top it with a slice of cheddar cheese and a spoonful of caramelized onions. Stack the second patty on top, then add another slice of cheese and more caramelized onions.

Remove the assembled burger from the skillet. Spread spicy mayonnaise onto the puff pastry sheet and sprinkle with a handful of Tex-Mex cheese blend.

Place the burger in the center of the pastry. Fold both sides of the pastry inward to encase the burger. Trim away any excess pastry with a knife.

Brush the surface of the pastry with beaten egg yolk for a golden finish. Using a pastry wheel or decorative roller, lightly score the surface with gentle lines without cutting through. Sprinkle sesame seeds on top.

Bake in a preheated 190°C (375°F) oven for 15 minutes until the pastry is golden and crispy.
