Slice the chicken breast thinly. Season with salt and white pepper powder, add starch and a little water, and mix well. Coat with oil to seal in the moisture and seasoning, which helps tenderize the chicken. Set aside.

Separate the white and green parts of the green onions—the white part is for seasoning, the green for garnish. Slice the garlic thinly.

Wipe the mushrooms clean with a damp paper towel rather than washing them to avoid excess moisture absorption. Slice thinly.

Heat the pan to medium heat. Pan-fry the mushrooms without oil or salt to draw out their moisture, about 2 minutes. Season with salt and set aside.

Increase heat to high and add oil. Cook the chicken until almost cooked through, about a few minutes.

Add the garlic slices and white parts of the green onion, stir until fragrant. Add the cooked mushrooms and mix well.

Taste and adjust the salt if needed. Garnish with the green parts of the green onion and serve.
