Cut the shrimp into small pieces and set aside.

Prepare the ground chicken and marinate it with soy sauce, rice wine, salt, sugar, white pepper powder, and cornstarch. Mix well and add sesame oil.

Add the shrimp pieces to the chicken mixture, then add the egg yolk and mix everything together evenly.

Place a wonton wrapper on your work surface, add about 1 teaspoon of filling in the center, brush egg white along two edges, and fold diagonally into a triangle.

Gently press from the filling outward to seal and eliminate air pockets. Repeat to make all 40 wontons.

Heat oil to 160°C (320°F). Gently place wontons in the oil and fry for about 3 minutes total, turning occasionally for even color. Remove when golden brown.

Mince the garlic and prepare the cornstarch-water mixture by stirring cornstarch into cold water.

Heat oil in a small pan and add the minced garlic, allowing it to sizzle briefly.

Add ketchup, brown sugar, salt, and soy sauce to the pan and mix well.

When the sauce starts to boil, stir the cornstarch mixture (since cornstarch settles) and add it to the pan. Stir continuously until the sauce boils again.

Remove from heat, add sesame oil and rice vinegar, and stir to combine. The dipping sauce is ready.
