Mild chili powder (paprika)¼ cups

Sugar1½ tsp

Chicken bouillon powderOptional; omit if you prefer to avoid MSG1½ tsp

Toast cumin seeds and Sichuan peppercorns in a wok over low heat for a couple of minutes, if using whole seeds; skip this step if using pre-ground spices.

Transfer the toasted cumin and peppercorns along with peanuts to a spice grinder and grind until fine. Do not grind peanuts alone, as they will turn into peanut butter; combine them with spices first.

In a bowl, combine spicy and mild chili powders, salt, sesame seeds, garlic powder, sugar, white pepper powder, and chicken bouillon powder.

Add the ground spice mixture to the bowl and crumble gently to break up any lumps, then mix thoroughly until uniform.

Transfer the spice mix to a sealed jar and store at room temperature for up to 5 months.
