Soak dried shiitake mushrooms in room temperature water for 4 hours, or in boiling water covered for 1 hour. Simultaneously, soak 2 oz of glass noodles in room temperature water. Soak 2 tbsp of small dried shrimp and cut the glass noodles into sections.

Prepare vegetables: slice 1 carrot, 1 lb turnip, 1 celery stalk, 5 oz button mushrooms, and 4 green cabbage leaves. Chop 1 onion and 3 garlic cloves. Squeeze excess water from shiitake mushrooms and cut into small pieces.

Remove the skin from chicken thighs and cut the meat into small pieces. Dilute 1 tsp cornstarch with 1 tbsp of water and set aside.

In a preheated pan over high heat, add 2 tbsp vegetable oil. Add garlic and cook until fragrant, then add shiitake mushrooms and dried shrimp, stirring for 2 minutes to intensify flavors.

Add the minced chicken, 1/2 tsp salt, and 1/2 tsp ground pepper. Stir and break up the chicken into small pieces, cooking for 3 minutes.

Add vegetables in order of cooking time: first onion and turnip, cover and stir occasionally for 3 minutes to maintain heat and even cooking.

Add mushrooms, cabbage, 1 tbsp light soy sauce, and 1 tbsp oyster sauce. Stir occasionally for 2 minutes.

Add glass noodles and celery, stirring for 1 minute to allow noodles to absorb cooking juices and soften.

Add the cornstarch mixture and stir for 20 seconds to thicken remaining juices and make rolling easier.

Add 1 tbsp sesame oil and stir for 20 seconds to infuse aroma. Spread filling on a tray to cool.

Mix 1/2 tbsp all purpose flour with 1 tbsp water to use as sealant. Prepare 4 tbsp vegetable oil for air fryer or oven cooking.

Use frozen egg roll wrappers and thaw for 2 hours. Separate wrappers one by one and keep in a bag to prevent drying. Coat each wrapper with oil on both sides for extra crispiness in the air fryer or oven.

Place 2 tbsp filling near the bottom of the wrapper. Roll upward to encase filling, fold sides toward center to create straight parallel edges, and continue rolling tightly to ensure firm well-shaped rolls.

Seal the wrapper edge with flour mixture. Cover rolls with clean cloth to prevent drying. Leave space between rolls during cooking to allow heat circulation for even browning.

For air fryer: cook at 350°F for 17 minutes. Check 2 minutes before the end and adjust timing based on your air fryer.

For oven: bake at 350°F for about 17 minutes.

For deep-frying: no need to brush wrappers with oil beforehand. Fry at 350°F for 5 minutes. For smaller rolls, use smaller wrappers with 1 tsp filling per roll and cook at 350°F for about 13 minutes.
