Heat oil in a wok and add ginger, garlic, and white parts of scallions. Cook over medium-low heat, stirring for a few minutes until the aromatics turn golden brown and fragrant.

Add the diced tomato and continue cooking until it softens and begins to break down, creating a flavorful foundation for the broth.

Add the cubed tofu and mushrooms. Pour in 4 cups of stock, bring to a boil, then reduce heat to low and simmer for about 3 minutes.
