Preheat oven to 350°F if using store-bought crust, or 425°F if using homemade. If making homemade crust, lightly flour your work surface, roll out the dough, shape it into the pie dish, and crimp the edges.

If using homemade crust, place it in the freezer for 15 minutes to chill. Once chilled, transfer to the oven (at 425°F) and blind bake for 15 minutes with parchment paper and baking weights or dried beans.

In a bowl, combine 1½ cups granulated sugar with ¼ cup sifted Dutch processed cocoa powder. Add optional espresso powder for enhanced chocolate depth.

Add 4 large eggs to the mixture and whisk well until smooth and well combined, being careful to avoid cocoa powder from flying out.

Melt ½ cup butter (at reduced power in short bursts to prevent splattering), then whisk it into the chocolate mixture until smooth and well integrated.

Stir in ¼ cup evaporated milk and 2 teaspoons vanilla extract, mixing until fully incorporated with no lumps.

Pour the chocolate filling into the prepared pie crust and bake at 350°F for about 50 minutes. The pie is done when the top is puffed and the center jiggles only slightly.

Remove the pie from the oven and allow it to cool completely, or chill it in the refrigerator. Cracks on the surface are normal and expected. Chilling will help you achieve clean, neat slices.

For serving, whip together ¾ cup heavy cream, ¼ cup powdered sugar, and optional vanilla until soft peaks form. Top each slice of pie with whipped cream and garnish with chopped chocolate if desired.
