   Add softened unsalted butter to a large bowl. Mix in the brown sugar and granulated sugar (using more brown sugar than granulated), beating with a handheld mixer or by hand until well combined.

   In a separate bowl, combine all dry ingredients (flour, baking soda, salt, and cornstarch). Gradually add the dry mixture to the wet ingredients, stirring to incorporate evenly. You may finish mixing the last portion by hand if needed.

   Preheat the oven to 375°F. Line a large baking sheet with parchment paper. Using a cookie scoop, portion the dough onto the sheet with space between each cookie. Top each with a few chocolate chips if desired.
