1
Cook 2 cups of pasta in a pot according to package instructions for about 11 minutes, then drain.
2
Prepare the shrimp: rinse with lemon juice, vinegar, and cool water, then remove the veins from both sides.
3
Season the shrimp with a drop of oil, salt, garlic powder, freshly cracked black pepper, all-purpose seasoning, and curry powder. Mix well and let rest for 1–2 minutes.
4
Heat butter in a pan and cook the shrimp one at a time until cooked through on both sides, about 2–3 minutes total. Remove to a bowl and set aside.
5
In the same pan, fry the green seasoning, Jamaica red seasoning, curry powder, and thyme for 1–2 minutes to release the flavors.
6
Pour in the coconut milk and mix well, cooking for about 1–2 minutes.
7
Add the cooked and drained pasta and mix well.
8
Return the cooked shrimp and mix for about 30 seconds. Taste and adjust seasonings as needed.
9
Serve garnished with fresh parsley and grated cheddar cheese if desired for extra creaminess.
