Combine fresh cranberries, brown sugar, and white wine vinegar in a bowl. Mix well and let sit to allow the cranberries to absorb the sugar and lose their tartness.

Pat the chicken pieces dry. Season generously with salt and pepper on both sides, lifting the skin to season underneath as well. Rub minced garlic all over the chicken, ensuring the seasoning gets under the skin. Repeat on both sides.

In a bowl, combine extra virgin olive oil, lemon juice, chopped celery, chopped onion, and a splash of white wine vinegar. Add the seasoned chicken pieces and toss to coat thoroughly. Let sit while the oven preheats to allow the flavors to penetrate.

Heat olive oil in a non-stick skillet over medium-high heat until shimmering. Place chicken skin-side down and sear until golden brown. Flip and sear the other side until well-colored. Repeat until all chicken pieces are seared.

Transfer the seared chicken to a baking dish. Top with the macerated cranberries and their juices. Pour chicken broth or water into the dish.

Bake in a 425°F oven for 30–40 minutes until the chicken is fully cooked through.
