Heat a skillet (preferably cast iron) over medium-high heat for 2–3 minutes until smoke begins to rise.

Add the defrosted carnitas to the hot skillet—no extra oil needed as the meat's natural fat will crisp it up. Stir frequently and cook for 6–8 minutes until deeply browned and crispy.

In the same pan, briefly toast each corn tortilla for 8–10 seconds to dry it out and prevent it from falling apart during frying.

Drizzle oil on the pan bottom. Place the tortillas in and cook for 2–3 minutes on one side until the cheese begins to melt.

Fill each tortilla with the crispy carnitas, cheese, salsa verde, and roasted chiles, then fold or close to form a quesadilla.

Cook until both sides are golden and crispy with the cheese fully melted. Serve immediately.
