Crispy Thai Pork Bites in Sweet Chilli Sauce

   Toss pork cubes with fish sauce, then coat lightly with 1.5 tbsp cornstarch. Add the 0.5 cup cornstarch and coat thoroughly. Transfer to a colander and shake gently to remove excess cornstarch.

   Heat the oil to the right temperature—test by dropping in a pork cube; it should sizzle immediately. Add half the pork, keeping pieces separated. Fry the first side for 1 minute until golden, then flip and continue cooking for a total of 3 minutes. Transfer to a paper towel-lined tray and repeat with the second batch.

   Pour out the oil and wipe the pan quickly with paper towel. Add sweet chilli sauce, lime juice, fish sauce and grated garlic, simmering for 2 minutes on medium to medium-high heat. Add the cooked pork, toss quickly to coat in sauce, and serve over rice garnished with coriander or green onion and lime wedges.
