Portuguese Chicken and Rice (one-pot dinner)

A delicious one-pot dinner combining Portuguese-seasoned chicken with a copycat Nando's-style spiced rice. The chicken is marinated in aromatic spices and cooked together with turmeric-infused basmati rice, peppers, and peas, finished with a homemade peri-naise.

Cut chicken thighs into bite-sized pieces. In a bowl, mix all Portuguese chicken seasoning ingredients: paprika, oregano, garlic powder, coriander, cayenne, brown sugar, salt, olive oil, and lemon juice. Coat the chicken pieces thoroughly with the seasoning and set aside to rest while preparing the remaining ingredients.

Heat olive oil in a large heavy-based pot over high heat. Add the chicken pieces and sear the surface until golden brown while the inside remains raw, then remove with a slotted spoon, leaving the oil and fat in the pot.

In the same pot, cook the diced onion and minced garlic for about 1 minute, then add the chopped bell pepper and cook for 2 more minutes. Stir in the rice.

Add the remaining rice ingredients: chilli flakes, turmeric powder, chicken stock, and salt. Stir well and bring to a simmer.

Scatter the seared chicken pieces across the surface of the rice. Cover with a lid, reduce heat to medium or medium-low (gentle simmer), and cook for 15 minutes without peeking or stirring.

Remove from heat and let rest for 10 minutes. Fluff the rice gently with a fork.

Make the peri-naise: in a bowl, mix together mayonnaise, paprika, garlic powder, onion powder, cayenne, oregano, white sugar, lemon juice, and salt until well combined.

Serve the chicken and rice on plates, top with peri-naise, and garnish with finely sliced green onion if desired.
