Bring a large pot of salted water to a boil over medium-high heat, using at least 2 teaspoons of salt.

Prepare the garlic: peel, smash, and finely mince the cloves (aim for about a quarter cup of minced garlic).

Slice the chicken breasts horizontally to an even thickness. Season with salt and cracked black pepper.

Heat 1 tablespoon butter and 2 tablespoons olive oil in a skillet over medium-high heat until melted and sizzling. Cook the chicken in two batches, about 7 minutes each batch or until golden on both sides and cooked through.

Add 1 pound of fettuccine to the boiling salted water. Stir to prevent sticking. Reserve 1 cup of pasta water before draining.

Lightly wipe out the chicken pan, keeping the flavorful browned bits. Add 0.5 cup butter and 2 cups heavy cream, heating over medium heat until the butter melts.

Add the minced garlic to the cream mixture. Reduce to the lowest simmer and stir frequently for about 5 minutes until the sauce thickens and the garlic flavors fully infuse.

Gradually whisk in the finely grated Parmesan cheese over low heat until completely melted and smooth.

Season the sauce with 0.5 teaspoon salt and 0.5 teaspoon cracked black pepper. Remove from heat.

Drain the cooked fettuccine and toss it into the sauce. If the sauce seems too thick after mixing, gradually add the reserved pasta water to restore a silky consistency.
