Preheat oven to 350°F and line two baking sheets with parchment paper.

Carefully separate 3 eggs, dividing yolks from whites. Ensure whites are completely free of yolk or shell.

Add 0.25 cup granulated sugar, 0.25 tsp salt, and 0.5 tsp vanilla extract to the yolks. Beat with a hand mixer on medium speed until pale and fluffy, a few minutes.

In a clean bowl with clean beaters, beat the egg whites starting at low speed until foamy. Gradually drizzle in the remaining 0.25 cup sugar a little at a time, increasing speed as needed. This French meringue requires patience to maintain volume.

Continue beating until soft peaks form with just a slight droop at the tip—firm but still pliable.

Beat the yolk mixture briefly to restore volume, then fold in the egg whites in three batches. Gently fold just until combined with no visible streaks, being careful not to deflate the mixture.

Measure 1 cup flour (120g) and 5 tsp cornstarch. Sift into the batter while gently folding to combine. Mix only until no flour streaks remain, taking care not to overmix.

Transfer the batter to a piping bag fitted with a large round tip (such as size 809). Avoid overfilling.

Pipe 4-inch long strips about 1 inch thick onto the prepared pans. Apply pressure as you pipe, then release and pull back to finish each finger.

Generously dust the piped fingers with powdered sugar.

Bake one sheet at a time at 350°F for 12–15 minutes, until lightly golden and firm to the touch.
