   Prepare the onion: take one large onion, cut it in half following the grain, then slice very thinly and cut into smaller pieces.

   Prepare the beef patties: use an ice cream scoop to measure about 3 oz of meat mixture (or use a scale), place on parchment paper and gently flatten to even thickness.

   Make the garlic butter: finely mince 4 cloves of garlic and mix thoroughly with 4 oz of softened butter.

   Heat the skillet: add clarified butter and preheat to 390°F. Lightly toast the brioche buns in the same skillet until golden, then remove and set aside.

   Cook the onions in another pan: cook the onion slices in butter over medium heat until soft and lightly colored. Season with salt and pepper. The onions should be stewed, not caramelized.

   Cook the beef patties: transfer the patties to the hot skillet, season with salt and pepper. Do not touch them while they cook—let them develop a nice sear, then flip to cook the other side.
