Heat oil in a skillet and cook the ground beef over medium heat, breaking it apart with a spoon, until it begins to brown.

For the sauce, place tomatoes, chile perones, serrano chiles, onion, and garlic on a hot griddle or over direct flame. Char them until slightly blackened on the surface.

Slice the onion thinly and cut the guajillo chiles into strips.

In a separate pan with oil, sauté the sliced onion and garlic until golden.

Add the guajillo chile strips and stir briefly, then add a splash of water and apple cider vinegar. Let the chiles soak and soften.

Once cooled, grind the cloves, oregano, and cumin together with salt in a mortar or grinder until powdered.

Mix the ground spice blend into the cooked beef, stirring well to distribute the flavors throughout.

Blend the charred tomatoes, chiles, and garlic into a sauce, adding salt and just a little water to achieve a thick consistency.

Warm the corn tortillas and fill each one with a portion of the seasoned beef. Roll tightly into a cylinder.

Plate the taquitos and top with the chile sauce, fresh cilantro, and diced onion. Serve hot.
