Glass Noodle Salad with Sesame Dressing

A refreshing glass noodle salad dressed with a nutty sesame sauce that balances sweetness and acidity. Simple to make and perfect as a light side dish for summer gatherings.

Prepare the glass noodles, optionally soaking them for a few minutes to speed up cooking.

Make the sesame dressing by stirring the sesame paste well, then adding 2 tbsp sesame paste, 1 tsp sugar, 1/3 tsp salt, and 1 tsp sesame oil. Mix thoroughly.

Add 1 tbsp water and 1 tsp rice vinegar to the sesame paste mixture and whisk until smooth.

Slice the carrot thin, stack the slices, and cut into julienne strips.

Slice the cucumber thin and cut into julienne strips using the same method.

Cook the glass noodles in boiling water for about 2 minutes until tender.

Drain the cooked noodles and immediately plunge them into ice water to cool, then strain well to remove excess water.

Place the drained noodles in a bowl, add the carrot and cucumber julienne, and drizzle with the sesame dressing.

Toss everything together thoroughly so the dressing evenly coats the noodles and vegetables.

Garnish with roasted sesame seeds and cilantro leaves if desired, then serve.
