Set burner to low heat and drizzle with olive oil. Add 2 tbsp butter and allow it to melt.

Add 2 lb ground beef and crumble it into small pieces as it cooks, about 3 minutes total.

Add ground cumin, stir well, and cook for another 30 seconds to 1 minute.

Add chopped onion, jalapeño, 2 green onions, 4 garlic cloves, and 3 cans of green chilis. Mix thoroughly and cook for 6 minutes.

Add chicken bouillon, cinnamon, onion powder, garlic powder, Hatch chili powder, clove, black pepper, sugar, salt, Mexican oregano, bay leaves, white vinegar, and soy sauce. Mix everything together thoroughly.

Increase heat to medium-high, add 5 cups of water, and bring to a boil.

If desired, add white beans when the liquid reaches a boil (optional).

Once boiling, reduce heat to medium-low, and partially cover the pot with the lid slightly ajar to prevent spillover. Simmer for 45 minutes.

After 45 minutes, turn off the heat. Mix 2 tbsp instant corn masa with 2 tbsp water, then stir into the pot. This will enhance flavor and thicken the sauce slightly.

Stir well and serve. Add extra chiltepins or spicy salsa on the side for added heat, if desired.
