Make the taco seasoning blend by combining chili powder, cumin, smoked paprika, garlic powder, onion powder, sugar, dried oregano, crushed red pepper flakes, salt, black pepper, and cornstarch. Mix thoroughly and set aside.

Prepare the enchilada sauce by heating neutral oil in a pot, then whisking in flour to create a roux. Cook, stirring constantly, for about a minute until it turns light brown. Add chili powder, cumin, oregano, garlic powder, onion powder, and sugar, stirring well.

Pour chicken broth into the flour mixture, stirring well. Add tomato paste and mix again. Let the sauce simmer gently for 3–4 minutes, stirring occasionally. Remove from heat and add a splash of apple cider vinegar for tanginess.

In another pan, heat neutral oil and add ground beef. Break up and cook the beef until fully cooked through, then drain excess fat.

Add the homemade taco seasoning to the beef and mix well. Pour in beef broth and let simmer for a couple of minutes until thickened and glossy. Spread the beef out evenly in the pan.

Lay a flour tortilla flat and spread refried beans on it. Top with the seasoned ground beef and finish with diced onion.

Fold both ends of the tortilla toward the center to create a simple burrito shape and place it seam-side down in a baking dish or container.

Pour the homemade red enchilada sauce over the burrito, making sure to distribute it along the sides. Sprinkle shredded cheddar cheese over the top.
