Honey Glazed Chicken Wings

   Brine the chicken wings in water with 1 tbsp of salt for 30 minutes to make them more tender and flavorful. Drain well after brining.

   In a bowl, combine 1 tsp salt, 1 tsp white pepper powder, 4 tbsp light soy sauce, 1 tbsp dark soy sauce, and 2 tbsp Shaoxing wine. Add the ginger slices and green onion pieces and mix well.

   Pour the marinade over the chicken wings and use your hands (in gloves) to coat them evenly. Refrigerate for at least 30 minutes, or several hours if time permits.

   Mix 3 tbsp honey with 1 tbsp of warm water and set aside.

   Heat oil in a pan and add the marinated chicken wings. Pan-fry for about 2 minutes on each side until golden brown.
