These succulent honey soy sauce grilled chicken wings are inspired by the famous 'Wong Ah Wah' chicken wings from Jalan Alor, a legendary glutton street in Kuala Lumpur, Malaysia. Using a low-and-slow cooking method, the wings are first roasted at 100°C to retain juiciness, then the heat is raised to 200°C for a crispy skin, with multiple glazing applications to build layers of caramelized flavour.
