Combine the olive oil, Cognac, sugar, cinnamon powder, cloves powder, baking soda, and orange juice. Mix well until the sugar dissolves.

Gradually add the self-rising flour to the mixture and blend until the flour is fully incorporated. Avoid overmixing to prevent the olive oil from separating.

Shape the dough into melomakarona (traditional curved or oval shapes) and place them on a baking sheet.

Prick the cookies with a fork, then bake at 180°C (356°F) for about 25 minutes until golden.

Prepare the syrup by combining 250 ml of water and 150 g of sugar, then simmer over low heat for about 5 minutes.

Stir in the honey to the syrup and combine well.

Let the baked cookies cool for 5 minutes, then dip them into the warm syrup for 1-2 minutes.

Place the syrup-coated cookies on a serving plate, sprinkle walnuts on top, and allow the syrup to cool before serving.
