Heat oil in a pan and lightly fry the pork belly, starting with minimal oil to gradually render the fat from the meat.

Fry the pork until light brown, pausing for about 15 seconds at a time, then stirring and resting again. Continue until the meat reaches a light to medium brown color. Dark marks are normal and will contribute flavor to the final dish.

Remove the cooked pork and set aside. If using hotdogs, briefly fry them in the rendered fat for about one minute until the outside is cooked, then remove and reserve.

Pour off excess oil, then sauté chopped onion and garlic in the remaining fat over high heat until the onion begins to soften.

Return the browned pork to the pan and stir-fry with the onion and garlic for about 1 minute.

Add tomato sauce and water, scraping the bottom of the pan to release the flavorful browned bits. Make sure all ingredients are submerged. Cover and bring to a boil.

Once boiling, reduce heat to low and add the pork stock cube and bay leaves. Simmer gently until the pork is very tender, about 45 minutes. Test tenderness by piercing with a fork.

Once the pork is tender, add the hotdogs (if using). Adjust heat to medium and add the carrots, potatoes, and bell peppers. Continue cooking for about 5 minutes until the vegetables are tender.

Optional: add fish sauce or salt for depth, and season with ground black pepper and fried onions. Gently toss the ingredients without breaking the potatoes.

Cover the pan and simmer for another 3 minutes. Add water if you prefer a saucier consistency.
