Prepare the salsa by placing tomatoes, serrano peppers, onion, and garlic in a pot with salt. Cook over heat until the ingredients are softened, then remove from heat and set aside.

Slice the sausages and cut the bacon into small pieces. Remove the seeds from the bell peppers and cut them into strips, then into cubes.

Remove seeds from the red and chili peppers and cut into cubes. Stem the jalapeños and slice into rounds.

Cut the red onion into three pieces.

Peel the potatoes and cut them into medium-sized cubes.

Heat oil in a skillet and fry the bacon until browned. Remove and set aside.

In the same pot, quickly sauté the potatoes in a little oil with salt and black pepper. Once cooked through, remove and set aside.

Add the red onion to the pot and sauté.

Add the sausages and quickly sauté together with the onion.

Add all the chopped peppers to the pot, season with salt and pepper, and cook until the peppers soften.

Return the cooked potatoes to the pot and combine all ingredients.

Add the fried bacon and pickled chili strips, and mix well.

Top with cheese and serve.
