   Combine bread flour, salt, sugar, yeast and butter. Mix with a paddle attachment for a few seconds, then add the liquid (water, milk or both).

   Once combined, increase to medium-high speed and mix for an additional 4 minutes until well developed. Be careful not to overmix or let the dough temperature get too high.

   Allow the dough to ferment for about 2 hours until it doubles in size.

   Divide the proofed dough into 3 equal portions. Deflate, fold and roll each portion into a tight, thick strand.

   Cover and rest for about 10 minutes. Then roll back and forth on the counter, keeping the center thick and the arms thinner, until reaching the desired length.

   Form the strand into a large U-shape. Pick up the two ends and twist them around each other twice. Fold the twisted part over and attach the ends to the curve of the pretzel.

   Place the shaped pretzel on a greased baking mat and freeze until firm.

   Immerse the firm pretzel in a lye solution for about 10 seconds and place on a prepared baking sheet.

   Top with sesame seeds, poppy seeds, salt, pearl sugar or other toppings as desired.

    Allow to proof for about an hour, then bake in a very hot oven for 12 minutes until golden and crispy.
