1
Preheat the oven to 350°F.
2
In a bowl, combine the spice cake mix, pumpkin pie spice, and pure pumpkin puree. Add the oil, eggs, and milk instead of water.
3
Beat on medium speed for 2 minutes until well combined.
4
Transfer the batter to a greased baking dish and bake for 30 to 35 minutes until fully cooked.
5
While the cake cools, prepare the tres leches mixture. In a measuring cup, combine the evaporated milk, media crema (or milk or heavy cream), sweetened condensed milk, and caramel sauce.
6
Mix until well combined and refrigerate until ready to pour over the cake.
7
Once the cake has cooled slightly, poke the entire surface of the cake with a fork or toothpick.
8
Gently stir the milk mixture, then evenly pour it over the poked cake. Cover and let the cake absorb all the milk for at least 4 hours or overnight.
9
Prepare the topping by combining the heavy whipping cream, sugar, and Mexican vanilla blend in a cold bowl.
10
Whisk until stiff peaks form.
11
Spread the whipped cream evenly over the top of the cake.
12
Refrigerate for at least 20 minutes before serving.
