These irresistible churros are a classic Mexican dessert perfect for any time of year, made surprisingly quick and easy. Served with a rich homemade chocolate sauce for dipping.

In a saucepan over medium-low heat, combine water, cinnamon stick, salt, sugar, and butter. Stir to combine and bring to a simmer.

Once the water reaches a boil, remove the cinnamon stick and add the flour. Mix well, pressing down to form a smooth dough.

Allow the dough to cool for a few minutes.

Transfer the cooled dough into a piping bag fitted with a large churro tip and pipe the churros into desired shapes.

Prepare the cinnamon sugar by mixing together 1 cup sugar with cinnamon.

Heat oil over medium-low heat. Carefully fry the churros until golden brown on all sides, about 2 to 3 minutes.

Remove the churros from the oil and place on paper towels to drain. While still warm, roll them in the cinnamon sugar mixture.

Repeat the frying and coating process with the remaining dough.

For the chocolate sauce: Heat heavy cream and stir in the Mexican chocolate disk, semi-sweet chocolate chips, and Mexican vanilla blend until smooth and combined.
