Add water, cinnamon stick, salt, sugar, and butter to a pan over medium-low heat. Stir and bring to a boil.

Once boiling, remove the cinnamon stick and turn off the heat. Add flour and mix until smooth and clump-free.

Let the dough cool for a few minutes.

Meanwhile, make the chocolate sauce: break the Mexican chocolate disk into a saucepan, add heavy cream, and heat over medium-low heat while stirring continuously until the chocolate melts.

As the sauce approaches a simmer, turn off the heat. Add Mexican vanilla blend and chocolate chips, then stir until melted. Set aside.

Transfer the cooled dough into a piping bag fitted with a large churro tip. Squeeze out all the air.

Pipe the dough into churro shapes onto parchment paper.

Mix sugar and ground cinnamon together to make cinnamon sugar.

Heat oil over medium-low heat. Add the churro dough and fry for about 2 to 3 minutes until golden brown all around.

Remove the fried churros and place on paper towels to drain. While still warm, coat with cinnamon sugar. Repeat with the remaining dough.

Serve the churros with the Mexican chocolate sauce for dipping.
