A classic Mexican-style grilled chicken recipe where chicken parts are first brined in salt water to lock in moisture, then coated with a homemade red chile adobo marinade and grilled until beautifully browned. Prepare the brine by dissolving 1/4 cup of table salt in 1 cup of water, stirring until the salt is completely dissolved.

Place the 2 bone-in, skin-on chicken breasts and 4 bone-in, skin-on chicken thighs into the brine and soak for about 1 hour.

Prepare the red chile adobo: blanch 4 cloves of garlic in the microwave with water for 1 minute to reduce the raw garlic intensity.

In a food processor, combine 2 oz of ground ancho chili with 2/3 cup of hot water and blend until mixed.

Add the blanched garlic to the food processor.

In a mortar, lightly grind small amounts of cumin and Mexican oregano, add a touch of ground cinnamon and ground black pepper, and transfer all these spices to the food processor.

Add 1 teaspoon of salt and 2 tablespoons of vinegar to the food processor and blend until the mixture is smooth and paste-like.

Remove the chicken from the brine after about 1 hour and pat dry with paper towels to remove excess moisture.

Divide the red chile adobo in half: use one half to coat and marinate the chicken pieces, and reserve the other half for the final glaze.

Wearing a glove, place the chicken pieces into the bowl with the red chile adobo and gently coat each piece with the marinade.

Prepare the potatoes for grilling: place potatoes in a bowl, drizzle with oil, sprinkle with salt, and toss together.
