Roasted Pork with Potatoes and Mushrooms

   Peel the potatoes and soak them in water to remove excess starch.

   Pat the potatoes dry, place them in a large roasting pan, add rosemary sprigs, unpeeled garlic cloves, and season with olive oil.

   Prepare the pork: leave the ribs whole, cut the pancetta into pieces, and pierce the sausages with a fork.
