Melt butter in a small saucepan over medium heat.

Add the finely chopped onion, shallot, and mushroom (if using). Cook gently over medium-low heat for about 5 minutes without browning, maintaining a slight crunch to the vegetables.

Pour in the vinegar, raise the heat to bring to a boil, then simmer over medium heat until reduced by half, about 3 to 3.5 minutes.

Add the warmed and strained demi-glace or brown stock and a hint of tomato. Stir well to combine.

Return to a boil, then simmer over medium heat for about 5 minutes to achieve a coating consistency. Skim off any impurities and excess fat that rise to the surface.

Turn off the heat. Taste and adjust seasoning with salt and black pepper as needed.

If making in advance, cover and set aside at this stage. Just before serving, gently warm the sauce and add the final garnish of diced ham, capers, gherkins, and parsley.

Gently stir to combine, then serve generously over grilled pork.
