   Toss the 1 pound of large shrimp with half of the minced garlic, a pinch of salt, and a small amount of olive oil in a bowl. Set aside.

   Add a small amount of extra virgin olive oil to a pan and heat over medium-high heat until the oil is shimmering.

   Spread the seasoned shrimp evenly in the hot pan and cook for 1 to 1.5 minutes over medium-high heat until they start to turn pink. Do not fully cook them at this stage—they will finish cooking in the sauce.

   Remove some of the shrimp from the pan. Add a small amount of more olive oil, the remaining minced garlic, and red pepper flakes to the pan. Turn the heat to medium-low, being careful not to brown the garlic.

   Pour in the dry white wine and let it reduce by about half.

   Zest the lemon first, setting the zest aside for garnish, then add the lemon juice to the pan.

   Return the shrimp to the pan and lower the heat. Once all the gray on the shrimp has turned pink, immediately turn off the heat. The shrimp will continue to cook in the residual heat of the sauce.
