Trim the ends of the eggplant, cut lengthwise into quarters, then cut into bite-sized pieces. Soak in water with a splash of rice vinegar to prevent oxidation and enhance flavor.

Prepare the garlic sauce by combining minced garlic, the white parts of green onions with some green portions, Thai chili peppers, and 2 to 3 tablespoons of light soy sauce in a bowl and mix well.

Add vegetable oil to the garlic sauce and stir to combine thoroughly.

Drain the soaked eggplant pieces and arrange them in a steaming bowl, alternating skin-side up and down. Pour the garlic sauce evenly over the eggplant.

Place the assembled dish in a steamer and steam over high heat for about 8 minutes until the eggplant is tender.
